Restaurant Inspections: Tokyo One and Quizno’s Subs

The most recently available restaurant inspection reports from Jan. 16-28 in the Lorton area.

From Jan. 16-28, the state health department inspected a few restaurants in the Lorton area. For prior restaurant inspection reports, click here.

In Virginia, restaurant inspection reports aren't quite as simple as getting a letter grade or an easy-to-see number rating to post in the front window.

That said, we all want to know how our favorite restaurants stack up on cleanliness and sanitation. Inspectors grade restaurants based on critical and non-critical violations.

A "critical violation" is one that "poses a direct or immediate threat to the safety of the food being served." Non-critical violations are generally related to cleaning or maintenance.

"Ideally, an operation would have no critical violations, or none which are not corrected immediately and not repeated. In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," according to Virginia Department of Health's website.

The site continues: "Keep in mind that any inspection report is a 'snapshot' of the day and time of the inspection. On any given day, a restaurant could have fewer or more violations than noted in the report. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment."

Below, find the latest restaurant inspection from the Virginia Department of Health. These inspections reflect visits from inspectors during the last few weeks. Some of the violations were corrected immediately during the recent inspections.

Tokyo One
9443 Lorton Market Street
Date of inspection: Jan. 16
Critical: One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
Critical (corrected during inspection): Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils.
Critical (corrected during inspection): Different types of raw animal foods stored in such a manner that may cause cross contamination as follows: raw chicken stored over raw beef inside of walk-in cooler
Critical (corrected during inspection): The person in charge is not able to provide written procedures for the use of time as a public health control with the following potentially hazardous food item(s): sushi rice.
Critical (corrected during inspection): Working containers of soap are not properly labeled with a common name.
Non-critical (corrected during inspection): Observed the handsink in the sushi area is being used to store food storage containers.

Quizno’s Subs
9433 Lorton Market Street
Date of inspection: Jan. 16
Critical: One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
Critical (corrected during inspection): There is no Certified Food Manager present at the beginning of the inspection.
Non-critical: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
Non-critical: Some equipment is not installed in a manner that allows accessibility for cleaning, nor is it installed with closely abutting surfaces to minimize the need for cleaning.
Non-critical: The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: masking tape covering the coving in the mop sink area.
Non-critical: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
Non-critical: Observed that the faucet at the three vat sink is leaking and is not maintained in good repair.
Non-critical: Absence of no-smoking signs or international no-smoking signs in non-smoking area.
