Restaurant Inspections: Hong Kong Cafe and Hunan Lorton

The most recently available restaurant inspection reports from March 2-8 in the Lorton area.

From March 2-8, the state health department inspected a few restaurants in the Lorton area. For prior restaurant inspection reports, click here.

In Virginia, restaurant inspection reports aren't quite as simple as getting a letter grade or an easy-to-see number rating to post in the front window.

That said, we all want to know how our favorite restaurants stack up on cleanliness and sanitation. Inspectors grade restaurants based on critical and non-critical violations.

A "critical violation" is one that "poses a direct or immediate threat to the safety of the food being served." Non-critical violations are generally related to cleaning or maintenance.

"Ideally, an operation would have no critical violations, or none which are not corrected immediately and not repeated. In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," according to Virginia Department of Health's website.

The site continues: "Keep in mind that any inspection report is a 'snapshot' of the day and time of the inspection. On any given day, a restaurant could have fewer or more violations than noted in the report. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment."

Below, find the latest restaurant inspection from the Virginia Department of Health. These inspections reflect visits from inspectors during the last few weeks. Some of the violations were corrected immediately during the recent inspections.

Great Harvest Bread Co.
9000-S Lorton Station Blvd.
Date of inspection: March 8
Non-critical: Absence of no-smoking signs or international no-smoking signs in non-smoking area.

Ledo Pizza & Pasta
8971 Ox Rd.
Date of inspection: March 7
Non-critical: The cutting boards along the prep refrigerators are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Non-critical: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
Non-critical: Plumbing connections in one stall in the women's bathroom are in a state of disrepair.
Non-critical (corrected during inspection): Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.

Hong Kong Cafe
9441 Lorton Market St.
Date of inspection: March 5
Critical (corrected during inspection): The person in charge failed to explain the correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.
Critical: One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
Critical: Raw animal food holding in a manner that may cause cross contamination of ready-to-eat food.
Critical: The food-contact surfaces of food storage containers and pans were not observed sanitized.
Critical: Food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device.
Critical: The person in charge is not able to provide written procedures for the use of time as a public health control with the following potentially hazardous food items: fried rice.
Critical (corrected during inspection): Restricted use of Raid inside of the food establishment do not meet the requirements in 40 CFR 152 Subpart 1 Classification of Pesticides.
Non-critical: Methods used for cooling were not adequate to facilitate proper cooling.
Non-critical: Food stored on the floor and/or food stored less than six inches off the floor inside of the walk-in cooler.
Non-critical: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
Non-critical: Food storage containers were found stacked while wet after cleaning and chemical sanitization.
Non-critical: One of the refrigeration units is not operating properly and is unable to maintain cold food at or below 41 degrees.
Non-critical: The door gaskets of the walk-in cooler are missing or damaged.
Non-critical: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: under prep tables, drains under prep sink, trays that used as storage, gaskets on the walk-in cooler, inside of walk-in freezer, inside of 1dr prep unit on cookline and outside of trash cans.
Non-critical: Floors throughout the facility are observed with dirt debris, dirt and dust.
Non-critical: Observed the handsink in the back kitchen being used as a dumping station and for storage.

Hunan Lorton

Date of inspection: March 4
Critical (corrected during inspection): Raw animal food holding in a manner that may cause cross contamination of ready-to-eat food
Critical (corrected during inspection): Observed that poisonous and toxic materials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Observed medicine such as tylenol, rubbing alcohol and other vitamins and medicines sitting on the same shelf as fish sauce and/or on sheet pans in the kitchen.
Non-critical: There was no temperature measuring device located in the following cold or hot holding equipment: The two door sliding door refrigerator.
Non-critical: Encrusted grease deposits and/or other soil deposits were observed on the food contact surfaces of the following cooking equipment: bus tubs used to hold parts for the mixer.
Non-critical: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: Gaskets on refrigeration and freezer, prep table shelves, sides of equipment, interior of refrigeration units.
Non-critical (corrected during inspection): Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
Non-critical (corrected during inspection): Dispensing and/or in-use utensils improperly stored between use as follows: rice scoops in 68-degree water.
